Spicy Carrot Rice

Makes: 2 Servings

Ingredients:

2 Cups Basmati Rice
4 1/2 Cups Water
1 1/4 Cups Carrots - Grated
2 Purple Onions - Diced
5 Teaspoons Cinnamon
5 Cloves - Crushed
9 Chillies - Diced
Cilantro (desired amount)
2 Tablespoons Vegetable Oil
Salt (desired amount)

Directions:

1) Cook rice in water.
2) Add chillies, onions, cinnamon, cloves, grated carrot,
salt, and oil to a frying pan & and fry until cooked.
3) Add the cooked rice to the frying pan.
4) Garnish with desired amount of cilantro.
5) Serve!

Quick and easy to make Chili dish for vegetarians

Makes: 2 Servings

1/2 Vidalia Onion - Chopped
1 Jalapeno Pepper
1/2 Cup TVP
1/2 Can Kidney Beans
1/2 Can Tomato Sauce
1 Garlic Clove - Chopped
1/2 Teaspoon Chili Powder
1 Tablespoon Water
Salt

Directions:

1. Mix onions, peppers, and garlic & saute.
2. Mix in remaining ingredients.
3. Cook for 3-5 minutes until vegetables are
soft and TVP is cooked.

Vegetarian Sandwich

For a tasty hot Vegetarian Sandwich just follow the recipe below

Makes: 1 Serving

INGREDIENTS:

2 Slices Whole Wheat Bread
2 Slices Mozzarella Cheese
1 1/2 Tablespoons Basil Pesto
1/2 Baby Eggplant - Sliced
1/2 Purple Onion - Sliced
1/2 Red Pepper - Sliced
1/2 Tomato - Sliced
1/2 Cup Sliced Mushrooms
1 Cloves Garlic
Dried Oregano
Dried Basil

DIRECTIONS:

1. Preheat oven.
2. Add pesto to each slice of bread.
3. Put one slice of cheese on each slice of bread.
4. Add remaining ingredients.
5. Sprinkle dried basil over the open sandwich.
6. Cook for 5 minutes in oven.
7. Serve!

Try these excellent Baked Apples as an alternative snack when you need something quick and tasty.

Makes: 1 Serving

Ingredients:

1 Apple
1 1/2 Teaspoon Honey
1 Teaspoon Orange Juice
1 Teaspoon Nuts (Your Choice)
Cinnamon & Raisins (optional)

Directions:

1. Wash & core apples.
2. Mix juice, honey & nuts.
3. Heat in microwave & mix again.
4. Slice apple into two halves.
5. Spread mixture over top of apple.
6. Cook in microwave.
7. Add cinnamon & raisins if desired.
8. Serve.

Wild Rice & Mushroom Casserole

Makes: 4-5 Servings

Ingredients:

2 Cups Wild Rice
1 Vidalia Onion - Sliced
4 Cups Vegetable Broth
5 White Mushrooms - Sliced
3 Cloves Garlic - Diced

Directions:

1. Add ingredients to crockpot or
casserole dish.
2. Pour broth over top & cover.
3. Cook on low heat for hours until
vegetables are soft and rice is finished.

Sometimes a carrot stick just won’t do as a snack, for those times there are Coconut Cookies

Makes: 25 Cookies

Ingredients:

1/2 Lb Flour
1/4 Oz Baking Powder
1/2 Teaspoon Salt
2 Oz Shredded Coconut
6 Oz Butter
1 Lb Sugar
4 Egg Whites
1 Tablespoons Vanilla Extract

Directions:

1. Mix dry ingredients together.
2. Add wet ingredients & butter.
3. Mix wet & dry ingredients.
4. Add to lined cookie pan with spoon.
5. Bake cookies at 400 degrees for 5-7 minutes
or until golden brown.

Vegetable Pasta Primavera

Vegetable Pasta Primavera a pasta dish with pizzazz.

Makes: 3+ Servings

Ingredients:

1 Lb. Pasta
6 Cloves Garlic - Mashed
4 White Mushrooms - Sliced Thinly
1 Teaspoon Salt
Soy Milk Or Evaporated Milk
1 Red Pepper
1 Vidalia Onion - Diced
2 Yellow/Green Pepper
Pinch Of Black Pepper

Directions:

1. Add mushrooms, garlic, and onion to a saucepan
& saute.
2. Boil pasta in water.
3. Add milk to vegetables & simmer on a low flame.
4. Add peppers & seasoning to vegetables and
continue to simmer.
5. Drain pasta & add to vegetables.
6. Add sauce.
7. Cook until vegetables are soft & pasta is finished.
8. Cool & serve!

Healthy Blueberry Muffins

Makes: 2 Dozen Muffins

4 Cups Whole Wheat Flour (for pastries)
1 Cup Natural Sugar or Sugar “In The Raw
2 Cups Fresh Blueberries
2 Teaspoons Baking Soda
4 Teaspoons Baking Powder
4 Tablespoons Vegetable Oil
1/2 Cup Soy/Rice Milk
2 Cups Soy Yogurt

Directions:

1) Preheat oven to 350.
2) Combine dry ingredients. Mix.
3) Stir in wet ingredients & mix.
4) Divide batter into 24 portions & add it to muffin holders.
5) Bake for 20 minutes or until a toothpick can be inserted
and removed cleanly.

Not another salad recipe for vegetarians but you’ll love this Mixed Vegetable Pasta Salad

Makes: 3+ Servings

Ingredients:

1 Lb Pasta Of Choice
3 Stalks Celery - Diced
1 Red Pepper - Diced
1/4 Cup Sliced Green Olives
2 Cups Creamy Italian Dressing
1 Small Yellow Onion - Diced
1/2 Pint Cherry Tomatoes - Diced

Directions:

1. Boil water & add pasta.
2. Mix & toss remaining ingredients.
3. Drain pasta & add to vegetables.
4. Mix thoroughly & refrigerate.
5. Mix again before serving.

Oatmeal Raisin Cookies

Oatmeal Raisin Cookies you baked yourself, so you know whats in them.

Makes: 24 Cookies

Ingredients:

1/4 Cup Shortening
2 Cups Brown Sugar
3/4 Cup Flour
1 Teaspoon Cinnamon
2 1/4 Cups Oats
2 Teaspons Vanilla
1/2 Teaspoon Baking Soda
3/4 Cup Raisins
2 Teaspoon Water
1/2 Teaspoon Salt
2 Eggs (Or Equivalent Egg Replacer)
2 Tablespoons Corn Syrup
1/4 Cups Butter

Directions:

1. Mix dry ingredients.
2. Mix wet ingredients.
3. Pour wet ingredients over dry
ingredients & mix thoroughly.
4. Portion out 24 cookies on
a greased or lined cookie sheet.
5. Bake in oven at 375 degrees
for 10 minutes or until golden
brown.
